We juiced our watermelon and it was good
- 1/2 (about 2.2kg) seedless watermelon, peeled, coarsely chopped
2 tsp finely grated ginger
2 tbs lemon juice
Mint leaves, to serve
Ice cubes, to serve
Method
- Step 1
Place watermelon, ginger and lemon juice in the jug of a blender and blend until smooth. Add sugar, if desired. - Step 2
Strain through a fine sieve into a serving jug. Add mint and ice cubes and stir to combine. Serve immediately.
Cucumbers
Cucumbers are a perfect summer veggie. Cucumbers are rich in B vitamins which give our bodies good energy. Put down the coffee and soda folks and try a cucumber slice.
but if you don't like to eat the skin on your cucumbers it is a great sunburn soother just like aloe vera.

We made a yummy cucumber salad. Perfect for summer
- 1 cup plain yogurt
- 1 cup finely diced radishes
- 1 cup finely diced cucumber
- 1 small garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
- 2 tablespoons minced fresh mint or parsley leaves
- soft-leafed lettuce or pita bread for serving
In a bowl stir together the yogurt, the radishes, the cucumber, the garlic paste, the mint or parsley, and salt and pepper to taste. Divide the salad among individual salad plates lined with the lettuce or serve it as a sandwich filling for the pita bread.
