Raspberries and GreenBeans
Raspberries in Champagne YUMMY!!
Raspberries are such a great summer treat good in anything from salads to yogurts to smoothies. They are also chock full of vitamins. Raspberries are really high in Vitamin C and Manganese they are also high in fiber vitamin k magnesium folate omega 3 fats copper vitamin E and Potassium. Because of those vitamins they are an antioxidant and an anti-inflammatory and some new studies suggest that raspberries are reducing obesity and blood sugar and of course raspberries are cancer fighters.
Raspberries go bad pretty quickly when you buy them so if you buy them in bulk you can wash and freeze them., they freeze up nice. Here's an interesting way to eat raspberries, mix them with a little bit of balsamic vinegar. It's like an explosion of yummy flavor in your mouth.
Greenbeans are one of our favorite veggies. They are easy to grow. You can even grow green beans indoors so you have fresh green beans all year. All you have to do is plant the bean seed in a pot and put by the window. Give the bean something to grow up and you can be harvesting green beans all year.
Green beans are good to have around because they are rich in fiber, vitamin A and green beans are antioxidants. There is B-12 in green beans which B vitamins are a great energy boosters.

Danish Frugt Salat {Fruit Salad}
Ingredients:
~4-5 cups fresh fruit
{grapes, strawberries, apples, blueberries, raspberries and peaches are my faves}
~1 cup heavy whipping cream
~ 2 tablespoons powdered sugar
~ 1 tablespoon vanilla bean paste {I use this one, but any vanilla will work.}
~ 1 bar of dark chocolate {I like Lindt Black Currant and Trader Joe's Dark Chocolate Truffle}
Whip up the cream, sugar and vanilla for 3-4 minutes on high--or until it looks
like this.
Roughly chop the chocolate.
Mix it all together and serve immediately. I don't add the raspberries until after it's served--I don't like them mushy.
Green bean Salad
In a large saucepan of boiling salted water, cook 1 pound of trimmed green beans until crisp-tender, 3 minutes. Drain and rinse under cold water.
Halve the beans and place in a large bowl. Add:
1/2 cup grape tomatoes, halved
1/2 cup Kalamata olives, pitted and halved
2 teaspoons extra-virgin olive oil
2 hard-cooked eggs, chopped
Coarse salt and ground pepper, to taste
Serve with lemon wedges. Enjoy!
