Sweet Potato



With Thanksgiving right around the corner we thought we'd talk about some sweet potatoes for our veggie and cranberries for the fruit.  Let's start it off with the sweet potato  There is another option for sweet potatoes besides the traditional yams, here in Hawaii we grow the most delicious deep purple sweet potato called Molokai sweet potatoes.  Sweet potato is in season right now so its a good time to add them to your shopping list plus they are a perfect side for your Thanksgiving day spread.  There are some great health benefits to adding this potato in your diet as well.  They are high in B6 which is known to reduce heart attacks and we've recently found out that a deficiency  in B6 vitamins could be the reason why you can't remember your dreams, they are a good source of vitamin c, they contain vitamin D which is perfect for the winter months when the sun is scarce and its so cold you can't get yourself to go outside, they contain iron and magnesium which we read that magnesium helps to regulate hormones so it might be a good thing to add in your diet especially around PMS time.  

Cranberries




Our fruit of this month and a perfect fruit to go along with turkey and tofurkey alike is cranberries.  Not only are they tasty but they also have some health benefits too.  Cranberry is the first fruit to reach for when you get the dreaded urinary tract infection, which Lex has had before and she knows first hand they hurt like a real bitch and cranberry supplements and pills really helped clear that up, not only is it good for the bladder but its also great for the kidneys, they also help to prevent gingivitis gum disease, plaque buildup, and cavities,and they strengthen the immune system which is perfect for the cold and flu season.

Every year Mais makes the best sweet potatoes for Thanksgiving.  They are made with the most delicious Molokai sweet potatoes which are purple.  They grow over here in Hawaii so come on over and try some :)
  

You don't have to use the purple potatoes for this recipe its  just as good with the yams.

Mais' Molokai Sweet Potato Heaven

Ingredients:
5 Sweet potatoes 
Cube of butter
a can of coconut milk
a bag of chopped mac nuts
Honey to taste
Marshmallows

Topping:
cup of flour
1/2 cup of brown sugar
1 cube of butter in slices chilled
whisk the ingredients together add butter and mash together

Preheat oven to 350 degrees.  Boil the sweet potatoes until soft.  Mix in the butter and coconut milk and mash the potatoes.  Put them in a blender and blend after mashing until silky smooth.  In a seperate bowl mix the flour and brown sugar, add the butter and mash with hands.  Put the silky smooth sweet potato mash in a baking dish top with the crumb topping.  Bake for 15-20 minutes or until golden brown.  Top with marshmallows and broil for 3 minutes or until marshmallows are golden brown.


Lex's Cranberry Salad with a creamy lemon vinagrette

Ingredients:

Mixed Greens
A hand full of cranberries
2 Apples
1/4 Cup of Goat cheese

Dressing:

2/3 Cup of olive oil
1/4 Cup of heavy cream
one lemon juiced

Mix together the salad, cranberries, apples. and goat cheese.  Whisk the olive oil the cream and lemon juice.  Mix the dressing and the salad together and enjoy.
